1 pound brussels sprouts thinly sliced lengthwise.
2 tablespoons extra virgin olive oil.
1 large onion (chopped)
1 teaspoon sweet smoked paprika.
4 slices multi-grained bread.
4 ounces extra sharp cheddar.
Heat oven to 350 degrees
Boil sprouts for 5 minutes.
Saute onion for 5 minutes
Add paprika to onions and cover and lower heat for 10 minutes.
Add sprouts to onion mixture and cook for 5 minutes uncovered.
Bake bread and cheese for 5 minutes until nicely toasted.
Top, serve and enjoy!
